Conference theme: From Pasture to Table – Grass-Fed Livestock Production of Meat and Milk and Its Preparation – Their Effects on Fatty Acid Composition and Human Health

Fatty acid composition of meat and milk produced on pasture is quite different from meat and milk from livestock in confinement feeding systems.  We will present information on how to maximize the good fatty acids for cattle on pasture, then we talk about the fate of these fatty acids when the meat is cooked or the milk is processed, and then we wrap up with a session where nutritionists talk about the differences in fatty acids and their effect on human health.  We also have two farms talk about their pasture-raised livestock:  A grass finished beef farm and a dairy farm replete with on-farm creamery.  Two other sessions: budgeting pasture so there is a better chance to have green forage available during the whole pasture season, and mob grazing – its effect on soil health and herd health.
